A sweet-and-spicy blend of maple flakes, cane sugar, peppers, garlic, onion, coriander and chilli. In a mini grinder, it caramelises slightly as it cooks and gives grilled meat, pork ribs, salmon, carrots or sweet potatoes a moreish Canadian-barbecue flavour.
